Cooking insects : Apple crumble & mealworms

We’re talking about eating insects in under all of their forms. As you know now, eating insects during the appetizer is fun. But, now you may be asking yourself how you could cook insects! There are many ways of preparing insects in different recipes. For today, let’s put insects in desserts!

 

Ingredients : For 6 verrines of crumble apple and mealworms

  • 3 apples
  • 18g of butter
  • 2 teaspoons of brown sugar
  • 60g of sugar
  • 90ml of cream
  • 45g of salted butter
  • 36g of all-purpouse flour
  • 9g of mealworms for cooking
  • 36g butter
  • 36g sugar
  • 36g of almond powder

Preparation: Let’s start cooking insects!

For apples : Cook your apples in butter and brown sugar.

For the caramel : Prepare your caramel with the 60 gr of white sugar. Heat aside the cream. Pour the caramel slowly while whisking. Bring to a boil. Stir in 45 grams of salted butter cut into small cubes. Stir and keep at room temperature.

For the Crumble : And here we will finally cook some insects , or in any case, prepare them: D. Start by chopping the mealworms. You can also grind the insects into a fine powder with a small mixer or a coffee grinder. Mix all the ingredients, butter, flour, sugar, almond powder and insect powder with your fingertips. Cook on a baking sheet on a plate for 10 minutes at 180 ° C (th.6).

Let’s assemble everything! Put the pieces of apples at the bottom of the verrine. Pour on the salted caramel on the apples. Spread some crumble on top. Serve and enjoy!
